The Kikuichi 7" Usuba White Carbon Vegetable Knife is a hand forged and traditionally-shaped Japanese knife made in Sakai, Japan. The Usuba is crafted from white carbon steel (or Shiroko steel) and is the most desired material for traditional Japanese knives. While these blades can rust if not properly maintained, the knives made from this metal can aquire a truly razor-like edge that resharpens easily. The literal translation of usuba is "thin blade" and its incredibly thin and sharp blade design helps it slice through vegetables without breaking down their cell walls, which results in discoloration, bruising and decrease in flavor. This 7" Usuba White Carbon Vegetable Knife is made with a one sided bevel edge that rounds up at the flat end. It has a full tang with traditional "D" handle and ebony bolster. Kikuichi backs all of its blades with a lifetime guarantee against defects. Handwash only.
